Chalupa - cooking recipe

4 lb. chuck roast
1 lb. pinto beans (about 2 1/4 c.)
2 cloves chopped garlic
2 Tbsp. chili powder
1 Tbsp. ground cumin
1 tsp. oregano
1 small can green chilies
1 Tbsp. salt
grated Longhorn cheese
chopped onion, lettuce, diced tomato, hot sauce and olives
Preparation

Put first 8 ingredients in large pot (crock-pot) and cover with water. Cook, covered, on low heat, and if necessary, add water. After 6 hours, take out bones and break up roast with fork. Cook with lid off until thick, about 1 hour. Serve mixture over bed of corn chips (Fritos) and add any or all of the other ingredients.
