Roasted Potatoes - cooking recipe

Ingredients
    4 medium baking potatoes
    3 large onions, thinly sliced
    Creole seasoning
    black pepper
    6 tsp. reduced calorie margarine
    8 large mushrooms, sliced
    4 Tbsp. chives, chopped
Preparation
    Slit potatoes at 1/4-inch intervals, not cutting all the way through.
    Put onion slices and seasonings in slits.
    Put margarine, about 1 1/2 teaspoons per potato, in alternate slits. Top with sliced mushrooms. Wrap in foil and grill over hot coals for 55 to 60 minutes. Sprinkle chives on each potato before serving. Serves 8.
