Ingredients

3/4 c. sugar
1/3 c. vinegar
4 c. cooked beets, sliced or diced
1/4 tsp. salt
2 tsp. cornstarch
1/3 c. water
3 Tbsp. butter
1/8 tsp. pepper
Preparation

Combine sugar and cornstarch.
Add vinegar and water; boil for 5 minutes.
Add beets and simmer 1/2 hour.
Add butter and season with salt and pepper.
Serves 6 to 8.
