Lawman Chili - cooking recipe

Ingredients
    4 large garlic cloves, minced
    1 brown onion, finely chopped
    1 red onion, finely chopped
    1 green bell pepper, finely chopped
    2 Tbsp. vegetable oil
    2 lb. beef sirloin, in 1/4-inch cubes
    1 lb. pork tenderloin, in 1/4-inch cubes
    salt to taste
    2 Tbsp. chili powder
    1/2 tsp. cayenne pepper
    1/2 tsp. paprika
    1/2 tsp. ground cumin
    3 c. water
    1 (6 oz.) can tomato paste
    3 medium tomatoes, coarsely chopped
    1 green chile, finely chopped
    1 jalapeno pepper, finely chopped
    Cheddar and Monterey Jack cheese (for garnish)
    sour cream (for garnish)
Preparation
    Saute the garlic, onions and bell pepper in vegetable oil in a large saucepan over medium heat until translucent.
    Remove onions and pepper mixture from pan, leaving liquid.
    Add beef and pork cubes and brown over medium heat, stirring occasionally, and adding salt to taste.
    Cook meat at least 15 to 20 minutes or until tender.
    Add onion and pepper mixture to meat. Stir and let cook together another 5 minutes.
    Add dry seasonings and again stir mixture.
    Add water, tomato paste, tomatoes, fresh chile and jalapeno pepper.
    Let entire mixture simmer for at least 2 hours, stirring occasionally. Serve with cheeses and sour cream.
