Irish Taco - cooking recipe
Ingredients

2 baked potatoes
3/4 c. cooked ground beef
1/2 c. taco sauce
1/2 c. grated cheese
1 c. shredded lettuce
1/2 c. diced tomatoes
1/4 c. chopped fresh cilantro
Preparation

Split tops of potatoes, scoop pulp from potatoes.
Place extra pulp in plastic bag and freeze (to be used later).
Mash remaining pulp in mixing bowl.
Flatten two potato shells to form \"taco shells\"; keep warm.
Add ground beef (cooked) to potato and mix well.
Add taco sauce and cheese.
Mix well.
Place mixture in potato shells.
