Zucchini And Green Rice - cooking recipe

Ingredients
    1 1/2 lb. zucchini
    3/4 c. chopped parsley
    juice of 1 lemon
    1 c. low-fat cottage cheese
    1 tsp. salt
    dash of pepper
    1 tsp. basil
    2 Tbsp. oil
    2 c. cooked brown rice
    1/2 c. grated Cheddar cheese
Preparation
    Slice zucchini into 1/4-inch rounds.
    Steam until done, but still firm.
    Preheat oven to 350\u00b0.
    Mix rice with lemon juice, parsley and seasonings.
    In a greased casserole, make a layer each of rice mix, cottage cheese and zucchini.
    Top with grated cheese. Bake, uncovered, for 10 to 15 minutes.
    Makes 4 to 6 servings.
