Christmas Pie - cooking recipe

Ingredients
    1 c. sugar
    3 1/2 Tbsp. cornstarch
    1 small can crushed pineapple
    3 bananas, diced
    1 c. chopped pecans
    1 can sour pitted cherries (No. 2)
    1 tsp. vanilla
    1 Tbsp. red food coloring
Preparation
    Mix sugar and cornstarch.
    Drain cherries and pineapple (save pineapple juice and add enough water to make 1 cup).
    Add color to cherries.
    Combine vanilla, cherries, pineapple and cup of juice, sugar and cornstarch.
    Heat until just comes to a boil. Cool. Add nuts and bananas.
    Pour in baked pie shell.
    Top with Cool Whip. Makes 2 pies.
