Blue Ribbon Banana Bread - cooking recipe

Ingredients
    1 c. sugar
    1/2 c. vegetable shortening
    2 c. flour
    2 eggs
    1 tsp. baking soda
    1/4 tsp. salt
    1/2 c. chopped nuts (optional)
    1 1/2 c. mashed ripe bananas (3 large)
    1 tsp. banana flavoring (optional)
Preparation
    Cream sugar and shortening.
    Add eggs and beat well.
    Blend dry ingredients together and add alternately with mashed bananas.
    Add flavoring and chopped nuts.
    Pour mixture into two 8 1/2 x 4 1/2-inch bread pans that have been lightly greased and floured on bottom only.
    Bake at 350\u00b0 for 35 to 40 minutes until a toothpick inserted in center of loaf comes out dry.
    Remove from oven and cool bread in pans 10 minutes.
    Remove from pans and continue to cool on wire rack.
    Place in clean plastic bags or foil.
    Allow bread to ripen overnight before slicing.
    Flavor develops upon standing.
