Ingredients

2 1/2 c. flour
2 eggs
2 c. milk
1/2 c. sugar
2 tsp. baking powder
2 tsp. baking soda
1/4 c. oil
Preparation

Combine all ingredients until smooth.
Spray griddle with nonstick spray and set it over moderate heat.
If you want small pancakes, drop about 2 tablespoons of the batter onto the griddle or pour about 1/4 cup for larger pancakes, if desired.
Bake until full of bubbles on the top and the underside is lightly browned. Turn with a spatula and brown other side.
