Ingredients

1/2 c. soft shortening
1 c. sugar
2 eggs
2 Tbsp. cream
1 tsp. vanilla
2 1/2 c. flour
1/4 tsp. baking soda
1/2 tsp. salt
thick apple butter
Preparation

Mix shortening, sugar and eggs. Stir in cream and vanilla. Stir in flour, baking soda and salt until blended.
Chill at least 1 hour.
Heat oven to 400\u00b0.
Roll dough 1/8-inch thick on lightly floured board.
Cut rounds.
Place apple butter on one round and place another round on top.
Press edges together. Bake 8 to 10 minutes.
Makes 2 dozen cookies.
