Super Bowl Gumbo - cooking recipe

Ingredients
    5 Tbsp. butter
    6 slices bacon, chopped
    1 c. onions, finely diced
    1/8 c. minced shallots
    1/4 c. celery, medium diced
    1 c. bell peppers (choice of colors), medium diced
    2 (14.5 oz.) cans stewed and chopped tomatoes
    3 Tbsp. minced garlic
    1 gal. fish, beef or chicken stock
    10 bay leaves
    2 tsp. dried thyme
    2 tsp. dried marjoram
    2 tsp. dried basil
    2 tsp. dried oregano
    4 lb. meat and seafood (see note)
    1 lb. fresh or frozen okra, sliced 1/2-inch thick and sauted in 2 tsp. oil until soft
    salt and black pepper to taste
    1 tsp. hot sauce
    1 tsp. Worcestershire sauce
    8 c. cooked long-grain white rice
Preparation
    In an 8-quart pot, melt butter and saut bacon until cooked but not crisp. Add onions, shallots, celery and peppers, continuing to saut for 1 minute. Add tomatoes and garlic; saut 3 minutes. Add stock slowly, continuing to stir; add bay leaves and seasonings. Bring to a boil, stirring frequently. Add meat and seafood, according to taste and budget. Bring mixture back to boil; reduce heat to medium. Cover and cook for 10 minutes. Skim mixture and reduce heat to simmer, covering and cooking 15 more minutes. Add sauted okra; cover and cook for 15 minutes. Adjust seasoning to taste with salt, pepper, hot sauce and Worcestershire sauce.
