Taffy Apple Salad - cooking recipe

Ingredients
    1 (20 oz.) can pineapple chunks
    1/2 c. granulated sugar
    2 Tbsp. lemon juice
    1 egg, beaten slightly
    1 Tbsp. cornstarch
    1 (8 oz.) container frozen whipped topping, thawed
    3 medium apples, peeled, cored and chopped
    2 c. miniature marshmallows
    1 1/2 c. salted peanuts
Preparation
    Drain pineapple; reserve juice.
    Combine sugar, lemon juice, egg, cornstarch and reserved pineapple juice in saucepan.
    Cook over low flame until thickened, about 5 minutes, stirring constantly.
    Cool.
    Stir in whipped topping.
    Combine apples, pineapple, marshmallows and peanuts.
    Fold into egg mixture. Cover; chill.
    Yield: 16 servings.
