Macaroni-Chicken-Cantaloupe Salad - cooking recipe

Ingredients
    1 c. cholesterol-free reduced-calorie mayonnaise or salad dressing
    1 Tbsp. lemon juice
    1/4 tsp. salt
    1/4 tsp. pepper
    2 c. cut up cooked chicken
    2 c. cooked macaroni or pasta
    1/2 c. frozen green peas, thawed
    1/2 c. cashew halves, if desired
    2 medium stalks celery, chopped (about 1 c.)
    1 cantaloupe, cut into 6 wedges
Preparation
    Mix mayonnaise, lemon juice, salt and pepper in large bowl until blended.
    Add remaining ingredients except cantaloupe; toss. Cover and refrigerate about 2 hours or until chilled.
    Spoon salad onto cantaloupe wedges.
    Yields 6 servings.
