Eggplant Casserole - cooking recipe

Ingredients
    1 eggplant
    1 tsp. soda or salt
    water
    cracker crumbs
    milk
    medium white sauce
    salt, pepper and other spices
    1 to 1 1/2 c. grated yellow cheese
Preparation
    Cube eggplant; soak overnight in water with 1 teaspoon soda or salt.
    This removes the bitter taste and black.
    Next morning, drain and rinse.
    Coat eggplant pieces with milk and cracker crumbs.
    Cook in hot grease until browned.
