Humitas(4 To 6 Servings) - cooking recipe

Ingredients
    4 c. fresh corn or thoroughly defrosted
    1/3 c. milk
    2 eggs
    2 tsp. paprika
    1/2 tsp. salt
    dash of pepper
    1/4 c. butter
    1/2 c. coarsely chopped green onions
    1/4 c. coarsely chopped green pepper
    1/3 c. freshly grated Parmesan
Preparation
    Combine corn and milk.
    Blend on high speed 30 seconds.
    Add eggs, paprika, salt and pepper.
    Blend 15 seconds longer until smooth.
    In heavy 10-inch skillet, melt butter on moderate heat. When foam subsides, add onions and green pepper.
    Cook 5 minutes, stirring until soft, not brown.
    Pour in corn.
    Reduce heat and simmer uncovered.
    Stir frequently 5 to7 minutes until thickens somewhat.
    Stir in cheese.
    As soon as it melts, remove from heat. Can be wrapped in corn husks; steam like tamales.
