Swedish Shrimp Over Rice And Peas - cooking recipe
Ingredients

2 green onions, sliced
1 tsp. vegetable oil
1 c. chicken broth
1 lb. shrimp, shelled and deveined
2 Tbsp. sour cream
2 Tbsp. Dijon mustard
1 tsp. cornstarch
1/8 tsp. pepper
1/4 c. fresh dill
1/2 tsp. lemon juice
serving of rice for 4
1 pkg. frozen peas
Preparation

Saute onion in oil in a skillet until soft.
Add 3/4 cup of broth.
Bring to a boil.
Add shrimp and reduce heat.
Simmer, covered, until shrimp are pink, about 3 minutes.
Whisk together 1/4 cup of broth, sour cream, mustard and cornstarch until smooth. Whisk into skillet.
Cook, stirring, until thickened.
Add pepper, dill and lemon juice.
Prepare rice and peas; mix together.
Serve shrimp and sauce over rice with peas.
