Tofu Spread - cooking recipe
Ingredients

2 cakes firm tofu
1/4 c. apple cider vinegar
1 tsp. Dijon mustard
1/4 c. cold pressed oil
1 tsp. salt, hot pepper or minced garlic to taste
3 pickles (medium-size), chopped or capers
6 scallion tops, cleaned and chopped
1 bunch fresh carrots, steamed lightly
1 Tbsp. good mayonnaise or sour cream
Preparation

Steam carrots and let cool.
Make salad dressing by mixing vinegar, oil, mustard and spices.
Mash tofu with fork and mix with dressing.
Let marinate for 10 minutes.
Chop cooled carrots. Mix all together and add mayonnaise and/or sour cream.
