Polynesian Chicken Salad - cooking recipe

Ingredients
    2 to 3 c. cooked chicken, cut in small pieces
    1/2 to 3/4 c. mayonnaise
    1/2 tsp. curry powder
    1 tsp. fresh lemon juice
    1/2 c. sour cream
    salt and pepper to taste
    1 1/2 c. diced celery
    1 1/2 c. diced pineapple
    1/4 c. shredded carrots
    1/2 c. slivered almonds
Preparation
    Cook chicken in salt water until tender.
    Cool.
    Drain and cut in small pieces.
    Combine mayonnaise, sour cream, curry powder, salt and pepper.
    Fold in chicken, celery, pineapple, carrots and almonds.
    Serve on lettuce leaf and garnish with Mandarin orange slices, if desired.
