Bayou Jambalaya - cooking recipe

Ingredients
    1 medium onion, sliced
    1/2 c. chopped green pepper
    1 c. uncooked rice
    2 Tbsp. shortening
    2 1/2 c. water
    1 Tbsp. apple cider vinegar
    1 c. cubed cooked ham
    1 lb. uncooked shrimp, cleaned and split lengthwise
    1 c. ketchup
Preparation
    In large skillet, saute onion, green pepper and rice in shortening until onion is transparent.
    Add remaining ingredients. Cover; simmer, stirring occasionally with fork, until rice is tender, about 40 minutes.
    Makes 4 to 5 servings.
