Zucchini Bread - cooking recipe

Ingredients
    3 eggs
    1 c. oil
    2 c. grated zucchini (unpeeled)
    1 tsp. salt
    1/2 tsp. baking powder
    1 c. chopped nuts (optional)
    2 c. sugar
    1 Tbsp. vanilla
    3 c. flour
    1 tsp. soda
    2 Tbsp. cinnamon
    1 c. raisins (optional)
Preparation
    Beat eggs until fluffy. Slowly add sugar and beat well. Add oil, vanilla and zucchini; mix. Sift and add dry ingredients to mixture. Stir in nuts and raisins. Pour into 3 medium greased and floured loaf pans. Bake for 1 hour at 325\u00b0.
