Bauernfruhstuck(German Omelet) - cooking recipe

Ingredients
    1/4 c. butter or margarine
    2 c. peeled, cubed baking potatoes
    1/4 c. finely chopped onion
    1 c. cubed cooked ham
    1/4 c. chopped fresh parsley
    6 eggs
    3/4 tsp. salt
    dash of pepper
    2 Tbsp. half and half
    1/2 c. (2 oz.) shredded Monterey Jack cheese
Preparation
    Melt butter in 10-inch skillet.
    Add potatoes and onion.
    Cook over medium heat, stirring occasionally, 20 minutes or until vegetables are tender and brown.
    Add ham and cook 5 minutes, stirring frequently.
    Sprinkle with parsley.
