Vegetarian Chili - cooking recipe

Ingredients
    2 cans black beans, drained and rinsed
    1 can tomatoes, diced (drain and reserve juice)
    1 can corn, drained
    1 can kidney beans, drained and rinsed
    1 med. onion, chopped
    1 med. green pepper, coarsely chopped
    1 med. red pepper, coarsely chopped
    1-2 cloves garlic, minced
    2 c. prepared rice, white or brown
    1 t. cumin
    1 T. chili powder
    Tabasco to taste
    Optional: 2 c. ground beef substitute
    Shredded cheddar cheese
Preparation
    In a large skillet, saute garlic in olive oil and add the onions and peppers. Cook for 2-3 minutes. Add cumin, chili powder and add juice from the tomatoes. Simmer over low heat.
