Cauliflower Soup - cooking recipe
Ingredients

1/2 head cauliflower, chopped
1/4 c. diced carrots
1 small onion
water (to just cover veggies)
1 Tbsp. instant chicken bouillon
1 1/2 Tbsp. margarine
1 Tbsp. flour
1 1/2 c. milk
salt and pepper to taste
1/4 c. Cheddar cheese, cubed
1/4 c. Swiss cheese, cubed
Preparation

Put first 5 ingredients in saucepan.
Bring to boil until vegetables are tender.
Drain, reserving broth.
In 2-quart saucepan, melt margarine.
Sprinkle in flour to make sauce.
Add salt and pepper.
Stir in milk until smooth.
Add cheeses, stirring until smooth.
Pour vegetable broth back in sauce, stirring.
Add vegetables.
Allow time for flavors to blend. Serve.
