Perfect Divinity - cooking recipe
Ingredients

2 1/2 c. sugar
1/2 c. light corn syrup
1/2 c. water
2 egg whites
1 tsp. vanilla
1/2 c. chopped candied cherries
Preparation

In a heavy 2-quart saucepan, combine sugar, corn syrup and water.
Cook to soft ball stage (236\u00b0), stirring only until sugar dissolves.
Meanwhile, beat egg whites until stiff peaks form. When syrup reaches 236\u00b0, gradually add half the syrup to egg whites, beating at high speed on electric mixer.
Cook remaining syrup to hard ball stage (250\u00b0) slowly add to the egg white mixture, beating constantly.
Add vanilla and beat until candy holds its shape (about 5 minutes).
If desired, add chopped candied cherries.
Drop pillows of candy from a teaspoonful onto waxed paper, swirling tops.
Makes about 3 dozen pieces of candy.
