Lemon-Ginger Drumsticks - cooking recipe
Ingredients

12 chicken drumsticks or thighs
3/4 c. freshly squeezed lemon juice
2 cloves garlic, minced or pressed
1 Tbsp. grated, fresh ginger
1 tsp. paprika
1 tsp. salt (optional)
1/4 tsp. ground black pepper
2 Tbsp. corn oil
2 Tbsp. packed brown sugar
1 scallion, thinly sliced
Preparation

To reduce unsaturated fat and calories, remove chicken skin. Rinse chicken with cold water.
(Carefully clean hands and all surfaces to reduce risks related to salmonella bacteria from raw chicken.)
In large, shallow baking dish, arrange chicken.
In small bowl, mix together the remaining ingredients.
Pour over chicken.
Cover and marinate in refrigerator at least 2 hours or overnight.
Prepare grill or broiler for cooking.
Lightly brush rack with vegetable oil.
Grill chicken 20 to 30 minutes, occasionally turning and basting with remaining marinade.
Chicken is done if juices run clear when pierced.
Makes 6 servings.
