Pumpkin Cake Roll - cooking recipe

Ingredients
    3 eggs
    1 c. sugar
    1 tsp. lemon juice
    2/3 c. pumpkin
    3/4 c. flour
    1 tsp. baking powder
    2 tsp. cinnamon
    1/2 tsp. salt
    1/2 tsp. ginger
    1/2 tsp. nutmeg
Preparation
    Beat eggs for 5 minutes on high.
    Add sugar, lemon juice and pumpkin.
    Beat well.
    Add flour, baking powder, cinnamon, salt, ginger and nutmeg.
    Pour into wax paper lined jelly roll pan and cover with 1 cup of chopped pecans.
    Bake in preheated 375\u00b0 oven for 15 minutes.
    Remove from pan immediately and roll in powdered sugared towel and let cool.
    Be sure to roll towel and cake together.
    When cooled, unroll and spread with filling.
