Peppered Roast Beef - cooking recipe

Ingredients
    1 (4 to 6 lb.) sirloin tip roast
    5 cloves garlic, peeled and cut into small pieces
    cracked or coarsely ground black pepper
Preparation
    Heat oven to 500\u00b0.
    Cut inch deep incisions all over roast; insert garlic in slits so they disappear into meat.
    Sprinkle meat all over with pepper and place fat side up in roasting pan.
    Allow 7 minutes per pound for medium rare.
    Do not open door!
    Finished roast will be brown, crisp on outside and pink throughout.
    Add water to drippings and heat again to pour over thin slices.
