Original French Potatoes - cooking recipe

Ingredients
    2 lb. boiling potatoes, cubed
    1 medium yellow onion, peeled and chopped (optional)
    2 Tbsp. flour
    4 Tbsp. olive oil
    2 Tbsp. parsley, chopped
    1/4 tsp. ground nutmeg
    lemon rind to taste, grated (I like tsp. or more)
    juice of 1 lemon
Preparation
    Peel
    potatoes.
    Boil in salted water for 3 minutes and drain. Mix onion, flour, olive oil, parsley, nutmeg and lemon rind.
    Add potatoes
    and
    mix until potatoes are well coated. Place in
    a buttered baking dish.
    Drizzle more oil on top, if desired.
    Bake at\t450\u00b0
    for 20 to 25 minutes or until nicely browned
    and tender.
    Pour
    lemon
    juice
    over
    top
    of baked potatoes and serve.
