Super-Fast Chicken Parmesan - cooking recipe

Ingredients
    1/4 c. fine dry bread crumbs
    2 Tbsp. grated Parmesan cheese
    2 whole medium chicken breasts, skinned, boned and halved lengthwise (about 1 1/2 lb. total) or 4 turkey breast tenderloin steaks (about 12 oz. total)
    2 Tbsp. skim milk
    1 (14 1/2 oz.) can stewed tomatoes
    2 tsp. cornstarch
    1/2 tsp. dried Italian seasoning
    1 Tbsp. grated Parmesan cheese
Preparation
    In a pie plate or on a sheet of waxed paper, combine bread crumbs and 2 tablespoons Parmesan cheese.
    Rinse chicken; pat dry. Brush chicken with milk.
    Coat with crumb mixture.
    Spray a cold large skillet with nonstick spray coating.
    Preheat skillet, then add chicken.
    Cook over medium heat for 8 to 10 minutes or until tender and no longer pink, turning the pieces occasionally to brown evenly.
    Transfer to a platter; cover to keep warm.
    Wipe skillet with paper towels.
