Chicken Fricassee - cooking recipe

Ingredients
    3 lb. chicken, cut up
    2 Tbsp. goya sofrito or 1 pkg. goya sazon
    2 Tbsp. oil
    1 tsp. dried oregano
    6 cloves garlic, chopped
    2 Tbsp. adobo seasoning
    2 green peppers or 1 green and 1 red, coarsely chopped
    1 onion, coarsely chopped
    4 sprigs cilantro, chopped
    1 c. white wine or chicken broth
    2 to 3 Tbsp. tomato sauce
    4 potatoes, quartered
    3 carrots, sliced
Preparation
    Heat oil and goya sofrito.
    Rub chicken with garlic, oregano and adobo.
    Saute chicken in oil until browned.
    Add peppers, onion, cilantro, tomato sauce and wine.
    Simmer 5 minutes, then add potatoes and carrots.
    Cook until chicken is done and vegetables are soft, about 1 hour.
    Periodically check liquid level and add a little water, if necessary.
    Serve with white rice.
