Oatmeal Muffins - cooking recipe

Ingredients
    1 c. regular oats (uncooked)
    1 c. buttermilk
    1/2 c. firmly packed brown sugar
    1/2 c. vegetable oil
    1 egg, beaten
    1 c. all-purpose flour
    1 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. salt
Preparation
    Combine oats and buttermilk; let stand 1 hour.
    Add sugar, oil and egg to oat mixture; mix well.
    Combine flour, baking powder, soda and salt in a large bowl.
    Make a well in center of mixture. Add oat mixture to dry ingredients, stirring just until moistened. Spoon into greased muffin pans, filling 2/3 full.
    Bake at 400\u00b0 for 20 minutes.
    Yield:
    12 muffins.
