Doughnuts - cooking recipe

Ingredients
    2/3 c. sugar
    3 Tbsp. shortening
    1 tsp. salt
    1 c. scalded milk
    1 pkg. yeast
    5 c. flour
    2 eggs, well beaten
    1 tsp. nutmeg
Preparation
    Add sugar, shortening and salt to milk.
    When lukewarm, add yeast (mixed with 2 tablespoons warm ???).
    Add 2 cups flour to make soft sponge.
    Set in warm place to rise.
    When light, add eggs, nutmeg and flour to make a light dough.
    Cover and let rise until double in bulk.
    Knead on floured board.
    Roll to 1/2-inch thickness.
    Cut with doughnut cutter.
    Cover and let rise again. Fry in deep oil at 375\u00b0.
    Drain on paper towels.
    Makes 30 doughnuts.
