Broccoli Cornbread - cooking recipe

Ingredients
    1 c. chopped onion
    10 oz. frozen chopped broccoli, thawed
    4 eggs, beaten
    1/2 c. melted margarine
    3/4 c. cottage cheese
    1 tsp. salt
    1 (7 oz.) pkg. corn muffin mix (I use Jiffy)
Preparation
    Combine onion, broccoli, eggs, margarine, cottage cheese and salt in a bowl; mix well. Add muffin mix; stir just until moistened. Spoon into greased 9 x 13 baking dish. Bake at 400\u00b0 for 20 minutes or until golden brown. Yields: 12 servings.
