Zucchini Bread - cooking recipe
Ingredients

1 c. salad oil
2 c. sugar
2 tsp. vanilla
1 tsp. soda
1 tsp. salt
3 eggs, beaten
2 c. grated zucchini
3 c. all purpose flour
1/2 tsp. baking powder
1 tsp. ground cinnamon
1 c. walnuts or pecans, chopped
Preparation

Combine oil, eggs, sugar, zucchini and vanilla, blend well. Stir in flour, soda, baking powder, salt, cinnamon.
Stir in nuts. Spoon batter into two 8 1/2 x 4 1/2 x 2 5/8 pan.
Bake 325\u00b0 for 1 1/2 hours or muffins approximately 30 minutes.
Yellow squach may be substituted for zucchini.
