Sweet Potato Balls - cooking recipe

freshly ground black pepper
1 tsp. grated lemon rind
2 c. mashed sweet potatoes
8 marshmallows
1 c. bread or cracker crumbs
1 large egg, beaten
2 Tbsp. water
vegetable oil for frying
Preparation

Combine salt and pepper with lemon rind and sweet potatoes in a large mixing bowl; roll mixture into 8 equal-sized balls. Put 1 marshmallow into the center of each ball.
Place crumbs in a large mixing bowl; roll balls in crumbs.
Combine the egg and water in a small mixing bowl; dip the balls into this and roll again in crumbs.
Pour 2 inches of vegetable oil into large skillet and heat.
Fry balls for about 4 minutes, or until brown and crispy.
Drain on paper towels.
