Leek And Potato Soup - cooking recipe

Ingredients
    2 large leeks
    4 to 5 medium potatoes
    1 slice bacon
    2 Tbsp. butter
    2 c. chicken broth
    salt and ground pepper
    1 c. milk
    2 Tbsp. parsley, minced
    Cheddar cheese, grated
Preparation
    Clean leeks and cut into 1/2-inch squares.
    Peel and dice potatoes.
    Cut bacon small and fry over moderate heat. Melt butter.
    Add veggies and saute about 5 minutes.
    Stir in chicken broth and season to taste. Cover pan and simmer about 30 minutes. Add the milk, a little at a time.
    (Do not boil.)
    Stir in parsley.
    Add grated cheese.
    Serves 4.
