Corn Relish - cooking recipe

Ingredients
    7 large ears sweet corn
    4 green peppers, finely chopped (about 2 c.)
    4 red peppers, finely chopped (about 2 c.)
    1 tsp. ground turmeric
    2 large onions, finely chopped (about 2 c.)
    2 c. sugar
    2 c. cider vinegar
    2 Tbsp. salt
    2 tsp. dry mustard
    1 tsp. hot pepper flakes
    cornstarch to thicken
Preparation
    Use large saucepan (8 quarts).
    Cut corn from cobs, scraping the ears, making about 4 cups.
    Mix corn with the chopped vegetables.
    Place all vegetables in large pan and add all remaining ingredients.
    Bring to a boil and simmer the relish over low heat, stirring occasionally, until fairly thick, about 30 minutes.
    Process in boiling water bath for 10 minutes.
    Yields 6 1/2 pints.
