Tuna And Pepper Fricassee - cooking recipe

Ingredients
    1/2 c. vegetable oil
    2 1/2 lb. tuna fillet, cut into 6 portions
    2 red peppers, seeded and thinly sliced
    1 yellow pepper, seeded and thinly sliced
    1/2 tsp. cayenne pepper
    salt
Preparation
    Preparation:
    10 minutes.
    Cooking:
    20 minutes.
    Heat the vegetable oil in a heavy skillet and cook the tuna pieces for 2 minutes per side, turning once.
    Transfer the tuna to a platter and keep warm.
    Add the peppers to the oil and cook until softened, stirring frequently, about 5 minutes.
    Return the tuna pieces to the pan and season with cayenne pepper and salt to taste.
    Cover the pan and cook for 5 minutes longer.
    Serves six.
