Cajun Dirty Rice - cooking recipe

Ingredients
    2 c. oil
    2 c. all-purpose flour
    4 c. water
    1 lb. each: ground beef, ground turkey and ground pork
    salt and pepper to taste
    2 c. each: chopped fresh parsley and green onion
    8 to 10 c. raw regular rice, cooked
    1 large chopped onion
    1 chopped bell pepper
    1 garlic head, peeled and chopped
Preparation
    Add onion, bell pepper and garlic to roux; stir, then put in large pot.
    Stir in water.
    Add meats and stir.
    Cook 1 1/2 hours over low heat, stirring occasionally.
    Stir in parsley, then green onion.
    Add cooked rice to meat mixture, a little at a time.
    Mix well until all rice is added.
    Eat hot or cold.
    Freezes well. Makes 12 to 14 servings.
