Ritzy Turnips - cooking recipe
Ingredients

6 to 8 medium white turnips
2 Tbsp. shortening or bacon drippings
1 tsp. salt
2 tsp. sugar
dash of pepper
1/2 tsp. flour
2 eggs, separated
Preparation

Prepare, cube and boil turnips 15 to 20 minutes in salted water (1/2 teaspoon salt to 1 cup water).
Drain and mash well.
Add shortening, salt, pepper, sugar and flour.
Beat egg whites until stiff and set aside.
With same beater, beat yolks until light. Stir yolks gradually into hot turnips.
Fold in greased 1 1/2-quart casserole.
Bake, uncovered, for 30 to 35 minutes or until puffy and lightly browned.
Serves 6.
