Pamela'S Potato Candy - cooking recipe
Ingredients

1 medium potato (boiled, peeled, and mashed completely)
1 - 2 boxes powdered sugar
1 teaspoon pure vanilla extract
Creamy peanut butter
Preparation

Add vanilla to mashed potato, mix well. Roll out on powdered sugar. Spread surface of potato with creamy peanut butter. Then roll up like a jelly roll, or cinnamon roll. Slice into 1/2 to 3/4 inch slices. Keep stretching the roll to give you the maximum amount of candy pieces. Refrigerate covered with wax paper and loose plastic. Remove when ready to eat, all at once or piece by piece.
