Stuffed Zucchini - cooking recipe

Ingredients
    1 1/2 lb. zucchini (about 3)
    1 medium onion, chopped
    1/4 c. margarine or butter
    1 small green pepper, chopped
    1 c. boiling water
    1/2 tsp. salt
    1 (2 oz.) jar pimento, drained
    1 c. herb seasoned stuffing mix
    1/2 c. Mozzarella, shredded
Preparation
    Use enough water and salt in proportion given to cook the zucchini, about 8 to 10 minutes or until tender.
    Cool slightly. Cut each in half lengthwise.
    Spoon out
    pulp and chop coarsely. Place cut side up in ungreased baking dish.
    Cook and stir onion in margarine until tender.
    Add chopped pulp, green pepper, pimento and stuffing mix.
    Fill the zucchini with the mix. Sprinkle each with 1 tablespoon cheese.
    Bake, uncovered, at 350\u00b0 until hot and cheese is melted, 25 to 30 minutes.
