Pineapple And Rice Mold - cooking recipe

Ingredients
    1/3 c. rice
    2 1/2 c. milk
    1/3 c. sugar
    1/2 tsp. salt
    2 envelopes gelatin
    1 lb. 4 oz. can pineapple (crushed)
    1/3 c. coconut
    1 tsp. vanilla
    1 tsp. almond flavoring
    2 c. Cool Whip
Preparation
    Mix rice, milk, sugar and salt in double boiler and cook 1 hour and 15 minutes.
    Sprinkle gelatin over pineapple and let stand 15 minutes.
    Put into rice mixture.
    Stir in coconut and flavorings.
    Refrigerate 1 hour.
    Fold in Cool Whip and refrigerate overnight.
    Delicious.
