Baked Zucchini And Cheese - cooking recipe

Ingredients
    4 Tbsp. olive oil
    3/4 c. sliced onions
    1 (20 oz.) can tomatoes, drained and chopped
    1 1/2 tsp. salt
    1/2 tsp. freshly ground black pepper
    1 tsp. basil
    1 garlic, minced
    2 lb. zucchini
    1/2 c. flour
    1/2 c. vegetable oil
    1/2 lb. thinly sliced Mozzarella cheese
Preparation
    Heat olive oil in saucepan; saute onions 10 minutes.
    Add tomatoes, salt, pepper, basil and garlic.
    Cook over low heat 45 minutes.
    Taste for seasoning and puree in blender or use a sieve. Slice unpeeled zucchini, then shake in paper bag with flour.
    Heat vegetable oil in skillet; cook squash until lightly browned.
    In shallow baking dish, arrange as many successive layers as possible of squash, sauce and cheese, ending with sauce and cheese.
    Bake in 350\u00b0 oven 30 minutes.
    Serves 4 to 6.
