Tortilla Casserole - cooking recipe
Ingredients

2 lb. diet lean ground beef
1 pkg. taco seasoning mix
2 cans diced Ro-Tel tomatoes
1 (12 oz.) block Mozzarella cheese
1 pkg. (20) cornmeal tortillas
1 large diced onion
1/2 c. water
2 cans pinto beans with jalapeno
1 (12 oz.) block Cheddar cheese
Preparation

Fry ground beef and onion together until done.
Drain off any grease.
Add taco seasoning mix and water to meat; stir until well blended.
Turn off heat and set aside.
Mix tomatoes and beans in a saucepan to heat.
Set aside.
Shred cheeses and mix together; set aside.
Cut tortillas into bite size pieces and set aside.
Spray a 9 x 13 x 2-inch pan or glass dish with Pam cooking spray.
Put a layer of tortillas on bottom of pan, over the tortillas put a layer of the taco meat.
Over the meat put a layer of tomatoes and beans. Sprinkle cheese on top of the beans.
Keep layering all ingredients until all used up.
End the top layer with cheese and bake at 350\u00b0 for 25 minutes.
