Breakfast Frittata - cooking recipe

Ingredients
    2 c. potatoes, raw and shredded
    2 c. chopped broccoli, raw
    1/2 c. diced onion
    1/2 c. chopped green pepper
    2 Tbsp. butter flavored Crisco
    6 eggs, beaten
    1/4 c. Parmesan cheese
    1/2 tsp. basil
    1/4 tsp. salt
    1/4 tsp. pepper
    1/4 c. water
Preparation
    Mix together potatoes, broccoli, onion, green pepper and butter in skillet.
    Cook spuds in butter until tender.
    Add onions and peppers; cook until onions are tender.
    Add broccoli; cover and cook on low for 5 minutes.
    Add to mixture eggs, Parmesan cheese, basil, salt, pepper and water.
    Cover and cook on low for 10 to 15 minutes (until edges are set).
    Sprinkle 1/4 cup Monterey Jack cheese on top (optional).
    Take off heat; cover and let set for 5 minutes.
    Serve.
