Broccoli Cornbread - cooking recipe
Ingredients

1 large onion, chopped
1 (10 oz.) pkg. chopped broccoli, thawed
1 tsp. salt
4 eggs, beaten
1/2 c. melted margarine
3/4 c. cottage cheese
1 (7 oz.) Jiffy corn muffin mix
Preparation

Combine onion, broccoli, eggs, margarine, cottage cheese and salt in bowl; mix well.
Stir in muffin mix just until moistened. Pour into 9 x 13-inch baking dish, well-greased.
Bake at 400\u00b0 for 20 minutes or until golden brown (check to make sure the bread is done).
May take longer than 20 minutes.
Cool; turn from pan and slice.
