Zucchini Bread - cooking recipe
Ingredients

3 eggs
1 1/2 c. sugar
2/3 c. vegetable oil
1 Tbsp. vanilla
2 c. grated zucchini, peeled or unpeeled
2 c. plain flour
1 Tbsp. cinnamon
1/4 tsp. baking powder
2 tsp. baking soda
1 tsp. salt
1 c. chopped walnuts or pecans
Preparation

Beat eggs until frothy.
Add sugar, oil and vanilla and beat until thick.
Stir in zucchini.
(I do not peel as it gives more color.)
Sift flour, cinnamon, soda, salt and baking powder.
Add to original mixture.
Fold in nuts.
