Higbee'S Muffins - cooking recipe
Ingredients

4 c. flour
2 Tbsp. baking powder
1 tsp. salt
2/3 c. shortening
1 c. sugar
2 egg yolks
2 c. milk
2 egg whites, beaten until stiff but not dry
Preparation

Combine flour, baking powder and salt.
Beat shortening until fluffy.
Add sugar and egg yolks and beat again until fluffy.
Stir dry ingredients into shortening mixture alternately with milk, stirring just to moisten.
Gently fold in egg whites.
Divide batter among well-greased muffin pans.
Bake in 400\u00b0 oven for 20 minutes.
