Vegetable Beef Soup - cooking recipe

Ingredients
    3 to 4 beef shanks, cleaned
    3 to 4 carrots
    1 parsnip
    1 onion
    2 potatoes
    1 rutabaga
    chopped fresh parsley
    pinch of saffron
    2 Tbsp. salt
Preparation
    Boil meat in salted water about 1 hour.
    Remove scum from water and keep boiling.
    Cut up vegetables and add to boiling meat.
    Cook about 2 hours.
    Keep adding water.
    Serve with noodles or dumplings.
